Normally in any Two point game I own I can window it and then drag the game to the correct middle screen. Can't find any setting in the game that does that. How do I get it to appear in my middle screen of 3 ??

Sorry to hear that! 

I think slattman92 is correct, it sounds like you need to check that your middle screen is your primary monitor. 

This can be done in "Display Settings" which can be accessed via a right click on your desktop screen.
