I bought a physical switch game in AU, but it does not come with Chinese language and audio. 

How can I get that to install into the switch?

Unfortunately the Chinese langauge on Switch is only available if you purchase the game from a Asian retailer. Currently it is not made available for the game if purchased from any non-Asian retailer.
