I'm running the Steam version of the game on Windows 10 and I have a XB271HU monitor (1440p). When I apply 2560x1440 in the graphics settings, it shows 3840x2160 as my resolution. It looks like the game is running in the correct resolution for my monitor, even though the setting says otherwise.

Hi HayleyJ,

This is a known issue and is purely visual/cosmetic. The resolution you pick is actually applied, the user interface does not update correct and will select the highest option available.

You can verify this by changing to a very low resolution to see the results.

We are working on a fix for this that should be ready in a future patch.
