I downloaded the latest update on steam, but the new Challenge doesn't appear. I already restarted the game. But nothing seems to do the trick... Any ideas on that?

I am also having the same problem. I have also had this problem in the past with winter events. After the winter event is over you may have to log out in game and restart and relog. It was fixed after that last time. I want to play the new content D:

There's been a few reports of the same, so I've let the wider team know in case there's something wrong.

Please could you double-check if you're opted into any betas on Steam? In your library, if you right-click on Two Point Campus, then click Properties, and then check the Betas tab.

And just in case, have you reached One Star on Freshleigh Meadows?

It sounds frustrating that the Summer School Challenge isn't showing up for you. Have you tried verifying the game files on Steam? Sometimes that can help with issues like this. By the way, I recently enjoyed playing some challenges on geoguessr free which reminded me of how fun these games can be!
